Ingredients

The base

  • 2 cups gluten free rolled oats
  • 2 cups almond milk
  • ¼ cup maple syrup
  • 2 tbsp coconut oil, melted
  • 2 tsp cinnamon
  • 1 tsp baking powder
  • ½ tsp sea salt
  • 2 units eggs

The toppings

  • 2 units apples (e.g., Pink Lady)
  • ¼ cup raisins
  • ½ cup chopped walnuts

Instructions

  1. Preheat the oven to 350°F.
  2. Line an 8x8 baking dish with parchment paper and spray it with cooking spray.
  3. Chop the apples into small cubes and set aside.
  4. In a medium bowl, whisk together the almond milk, maple syrup, melted coconut oil, and eggs.
  5. Add the oats, baking powder, cinnamon, and sea salt, stirring until fully combined.
  6. Sprinkle some apple cubes in the bottom of the baking dish, then pour the oatmeal mixture on top.
  7. Add the remaining apples, raisins, and walnuts on top.
  8. Bake for about 40 minutes until cooked through.
  9. Let it cool before slicing if you plan to cut it into squares.
