Ingredients

The oatmeal base

  • cup rolled oats
  • 1 large apple, peeled and chopped
  • 1 tablespoon chia seeds
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground ginger
  • pinch fine sea salt
  • 1 to 1¼ cups unsweetened almond milk
  • tablespoons pure maple syrup
  • ½ cup unsweetened applesauce
  • ½ teaspoon pure vanilla extract
  • 1 teaspoon fresh lemon juice (optional)

Suggested toppings

  • 2 tablespoons chopped walnuts
  • to taste diced apples
  • to taste coconut sugar
  • to taste cinnamon and ground ginger
  • to taste granola
  • to taste coconut whipped cream

Instructions

  1. In a medium pot, combine the oats, chopped apple, chia seeds, cinnamon, ginger, salt, almond milk, maple syrup, and applesauce.
  2. Cook over medium heat for about 9 to 15 minutes, stirring often until thickened and the oats are soft.
  3. Stir in the vanilla extract and lemon juice if using.
  4. Serve in bowls and add your desired toppings.
