Ingredients

Overnight Oats

  • 1 ½ cups old-fashioned rolled oats
  • 2 tablespoons chia seeds
  • 1 ½ cups milk (of choice)
  • 2 tablespoons pure maple syrup
  • 1 ½ teaspoons ground cinnamon
  • 1 teaspoon pure vanilla extract
  • a pinch coarse salt

Apple Pie Topping

  • 1-2 tablespoons butter
  • 2 medium firm apples (skins on, cored and diced)
  • 1 tablespoon brown sugar
  • ½ teaspoon ground cinnamon
  • 3 tablespoons chopped toasted walnuts (optional)

Instructions

  1. Whisk together oats, chia seeds, milk, maple syrup, cinnamon, vanilla extract, and salt in a bowl.
  2. Cover and refrigerate for at least 4 hours or overnight.
  3. Melt butter in a skillet over medium heat.
  4. Add diced apples and sauté for 4-5 minutes until soft.
  5. Stir in brown sugar and cinnamon.
  6. Serve overnight oats cold or warm them in the microwave.
  7. Top with apple pie topping and walnuts if desired.
