Baked Banana Oatmeal

Ingredients

The base

  • 3 pieces ripe bananas
  • ¾ cup milk of choice
  • 2 tablespoons maple syrup
  • 2 cups old fashioned rolled oats
  • 2 tablespoons ground flaxseed
  • 2 teaspoons ground cinnamon
  • 1 teaspoon baking powder
  • ¼ teaspoon fine sea salt

The topping

  • ½ cup chopped walnuts
  • optional none extra walnuts for topping

Instructions

  1. Preheat the oven to 350ºF and grease an 8-inch square baking dish.
  2. In a large bowl, mash the ripe bananas until smooth.
  3. Add the milk and maple syrup to the mashed bananas and stir well.
  4. Mix in the oats, ground flaxseed, cinnamon, baking powder, and salt, then stir again.
  5. Fold in the chopped walnuts and transfer the mixture to the prepared baking dish.
  6. Sprinkle extra walnuts on top if desired.
  7. Bake for about 40 minutes until the edges are golden and the center is firm.
  8. Let it cool for at least 10 minutes before slicing and serving.
