Ingredients

Wet ingredients

  • 2 large over-ripe bananas
  • 2 large eggs
  • ¼ cup date paste
  • 1 cup buttermilk
  • 1 cup whole milk
  • 1 tsp pure vanilla extract

Dry ingredients

  • cups rolled oats
  • ½ cup chopped walnuts
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • ½ tsp salt
  • ¼ tsp ground nutmeg

Optional Garnish

  • to taste chopped walnuts
  • to taste banana slices

Instructions

  1. Preheat the oven to 350°F and grease a 9" square baking dish.
  2. In a large bowl, mash the bananas with the eggs and date paste until smooth.
  3. Add the buttermilk, milk, and vanilla extract, and whisk until combined.
  4. In a separate bowl, mix the rolled oats, walnuts, baking powder, cinnamon, salt, and nutmeg.
  5. Combine the dry ingredients with the wet ingredients and stir until well mixed.
  6. Pour the mixture into the prepared baking dish.
  7. Bake for 25 minutes, then sprinkle with chopped walnuts and bake for an additional 8-10 minutes until set.
  8. Let cool slightly before cutting into squares and serve warm or cold, garnished with banana slices if desired.
