Easy Baked Banana Oatmeal

Instructions
- Preheat the oven to 375ºF and grease an 8×8-inch baking pan.
- In a large bowl, combine the oats, baking powder, salt, and cinnamon.
- In a medium bowl, mash one banana until smooth, then mix in the egg whites, milk, and vanilla.
- Combine the wet and dry ingredients thoroughly.
- Line the bottom of the prepared pan with one sliced banana.
- Pour the oat mixture over the bananas and top with the remaining sliced banana.
- Sprinkle coconut sugar on top if desired.
- Bake for 40-45 minutes until golden brown and cooked through.
- Cool, slice into pieces, and enjoy.
