Easy Baked Banana Oatmeal

Ingredients

  • 2 cups old-fashioned rolled oats
  • 1 tsp baking powder
  • ¼ tsp salt
  • 1 tsp cinnamon
  • 3 pieces bananas
  • cup egg whites
  • 1.5 cups milk
  • 1 tsp vanilla extract
  • 1 tbsp coconut sugar (optional)

Instructions

  1. Preheat the oven to 375ºF and grease an 8×8-inch baking pan.
  2. In a large bowl, combine the oats, baking powder, salt, and cinnamon.
  3. In a medium bowl, mash one banana until smooth, then mix in the egg whites, milk, and vanilla.
  4. Combine the wet and dry ingredients thoroughly.
  5. Line the bottom of the prepared pan with one sliced banana.
  6. Pour the oat mixture over the bananas and top with the remaining sliced banana.
  7. Sprinkle coconut sugar on top if desired.
  8. Bake for 40-45 minutes until golden brown and cooked through.
  9. Cool, slice into pieces, and enjoy.
