Ingredients

Wet Ingredients

  • 2 large eggs
  • 1 cup mashed banana or fruit puree
  • 1 teaspoon vanilla extract
  • 2 tablespoons maple syrup
  • ¾ cup unsweetened almond milk
  • 2 tablespoons melted coconut oil

Dry Ingredients

  • 2 cups rolled oats
  • ½ cup white whole wheat flour
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon

Instructions

  1. Preheat the oven to 350ºF and spray an 8x8-inch baking dish with nonstick cooking spray.
  2. Mash the ripe banana in a large bowl until pureed.
  3. Add the rest of the wet ingredients to the bowl and mix until combined.
  4. In a separate bowl, combine all dry ingredients.
  5. Combine the wet and dry ingredients, mixing until well combined.
  6. Transfer the batter into the prepared baking dish.
  7. Bake for about 30 minutes or until the top begins to brown.
  8. Remove from the oven and let cool before serving.
