Ingredients

The base

  • 1 and 3/4 cups milk
  • 2 large eggs
  • 1/2 cup pure maple syrup
  • 1/4 cup unsalted butter, melted
  • 1/4 cup unsweetened applesauce or mashed banana
  • 3 cups old-fashioned whole rolled oats
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1 teaspoon pure vanilla extract
  • 1/4 teaspoon salt

The toppings

  • 1 and 1/2 cups fresh or frozen mixed berries
  • 1/2 cup chopped walnuts or pecans

Instructions

  1. Preheat the oven to 350°F (177°C) and prepare a baking pan with nonstick spray.
  2. In a large bowl, whisk together all the ingredients until well combined.
  3. Pour the mixture into the prepared baking pan and add nuts on top if desired.
  4. Bake for 35 minutes until the center is almost set.
  5. Let it cool for 5 minutes before serving, and enjoy with yogurt if desired.
