Ingredients

Wet Ingredients

  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ¼ cup maple syrup
  • ½ cup unsweetened, plain almond milk
  • 2 tablespoons melted coconut oil

Dry Ingredients

  • 2 cups rolled oats
  • 1 large ripe banana
  • ½ cup white whole wheat flour
  • 1 cup berries
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon

Instructions

  1. Preheat the oven to 350ºF and spray an 8×8-inch baking dish with nonstick cooking spray.
  2. Mash the ripe banana in a large bowl until pureed.
  3. Add the remaining wet ingredients to the bowl and mix until combined.
  4. In a separate bowl, combine the dry ingredients.
  5. Mix the dry ingredients into the wet mixture until well combined.
  6. Transfer the batter into the prepared baking dish.
  7. Bake for about 30 minutes or until the top begins to brown.
  8. Remove from the oven and let cool before serving.
