Ingredients

Wet Ingredients

  • 1 medium ripe banana
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ¼ cup maple syrup
  • ¾ cup unsweetened almond milk

Dry Ingredients

  • 2 cups rolled oats
  • ½ cup white whole wheat flour
  • 1 teaspoon baking powder
  • 1 pint raspberries
  • 1 pint blackberries
  • cup mini dark chocolate chips
  • a pinch salt

Instructions

  1. Preheat the oven to 350ºF and prepare a 10-inch by 7-inch casserole dish with nonstick spray.
  2. Mash the banana in a large bowl and then mix in the wet ingredients until combined.
  3. Add the rolled oats, white whole wheat flour, baking powder, berries, and salt to the mixture and stir.
  4. Fold in the mini chocolate chips and transfer the batter to the prepared casserole dish, spreading it evenly.
  5. Top with additional berries if desired.
  6. Bake for 30 minutes, then add more chocolate chips if desired and bake for an additional 5 minutes.
