Ingredients

The base

  • 2 ¾ cups old fashioned rolled oats
  • 1 tablespoon chia seeds
  • 1 teaspoon baking powder
  • ¼ teaspoon fine salt
  • ¼ cup maple syrup or honey
  • ½ cup plain yogurt
  • 2 large eggs
  • 1 ¼ cups milk of choice
  • ¼ cup melted unsalted butter
  • 2 teaspoons pure vanilla extract

The toppings

  • 1 cup fresh raspberries
  • ¼ cup chocolate chips

Instructions

  1. Preheat the oven to 375℉ and prepare a baking dish with cooking spray.
  2. In a bowl, mix the oats, chia seeds, baking powder, salt, maple syrup, yogurt, eggs, milk, melted butter, and vanilla until combined.
  3. Gently fold in the raspberries and chocolate chips.
  4. Transfer the mixture to the baking dish and top with extra raspberries and chocolate chips.
  5. Bake for 30-35 minutes until the center is set.
  6. Allow to cool for 10 minutes before serving.
  7. Serve with yogurt and maple syrup if desired.
