Ingredients

The base

  • cups rolled oats
  • 1 tsp ground ginger
  • ½ tsp salt
  • ¼ cup dry-roasted almonds, coarsely chopped

The liquid and sweeteners

  • 2 cups unsweetened almond milk, or milk of choice
  • ¼ cup honey, or maple syrup
  • 2 Tbsp olive oil
  • 1 tsp vanilla

The fruit

  • 1 cup fresh raspberries

Instructions

  1. Preheat the oven to 350°F.
  2. In a large bowl, mix the oats, ginger, salt, and chopped almonds.
  3. In another bowl, whisk together the milk, honey (or maple syrup), olive oil, and vanilla.
  4. Combine the wet ingredients with the oat mixture, stirring until just combined.
  5. Gently fold in the fresh raspberries.
  6. Spread the mixture into a prepared 8x8 (or 9x9) baking dish.
  7. Bake for 30 to 35 minutes until the oats are set.
  8. Let it stand for 10 minutes before serving. Top with additional fruit and drizzle with honey or maple syrup if desired.
