Raspberry Almond Baked Oatmeal

Instructions
- Preheat the oven to 350°F.
- In a large bowl, mix the oats, ginger, salt, and chopped almonds.
- In another bowl, whisk together the milk, honey (or maple syrup), olive oil, and vanilla.
- Combine the wet ingredients with the oat mixture, stirring until just combined.
- Gently fold in the fresh raspberries.
- Spread the mixture into a prepared 8x8 (or 9x9) baking dish.
- Bake for 30 to 35 minutes until the oats are set.
- Let it stand for 10 minutes before serving. Top with additional fruit and drizzle with honey or maple syrup if desired.
