Instructions
- 1. Preheat the oven to 375°F and prepare a 9×9 baking dish with nonstick spray.
- 2. In a large bowl, combine the oats, cinnamon, baking powder, and salt.
- 3. In a separate bowl, whisk the eggs.
- 4. Add the almond milk, maple syrup, coconut oil, and vanilla to the eggs and mix well.
- 5. Pour the wet ingredients into the dry ingredients and stir until combined.
- 6. Pour the batter into the prepared baking dish and add the berries on top.
- 7. Bake for 45-48 minutes or until golden brown.
- 8. Top with peanut butter, maple syrup, or any desired toppings before serving.
