Ingredients

Dry Ingredients

  • 2 cups old-fashioned oats
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • ¼ tsp salt

Wet Ingredients

  • cups almond milk
  • 2 pcs eggs
  • cup maple syrup
  • 2 tbsp coconut oil
  • 1 tsp vanilla

Berries

  • cups fresh or frozen berries

Instructions

  1. 1. Preheat the oven to 375°F and prepare a 9×9 baking dish with nonstick spray.
  2. 2. In a large bowl, combine the oats, cinnamon, baking powder, and salt.
  3. 3. In a separate bowl, whisk the eggs.
  4. 4. Add the almond milk, maple syrup, coconut oil, and vanilla to the eggs and mix well.
  5. 5. Pour the wet ingredients into the dry ingredients and stir until combined.
  6. 6. Pour the batter into the prepared baking dish and add the berries on top.
  7. 7. Bake for 45-48 minutes or until golden brown.
