Ingredients

  • 2 cups rolled oats
  • ¼ cup dark brown sugar
  • 3 tbsp ground flax seed
  • 1 cup plain Greek yogurt
  • 2 large eggs
  • ½ cup milk
  • 2 tsp vanilla extract
  • cup chocolate chips
  • ¼ tsp salt
  • 1 tsp baking powder

Instructions

  1. 1. Preheat the oven to 350°F and prepare ramekins or a baking dish with oil.
  2. 2. Method one: Blend all ingredients except chocolate in a food processor until smooth.
  3. 3. Method two: Pulse oats until fine, then mix with dry ingredients in a bowl. Add wet ingredients and combine well.
  4. 4. Stir in chocolate chips.
  5. 5. Pour the mixture into ramekins and top with additional chocolate chips if desired.
  6. 6. Bake for 25-30 minutes until golden brown and firm but slightly spongey in the middle.
