Instructions
- 1. Preheat the oven to 350°F (180°C) and prepare two baking sheets with nonstick spray.
- 2. Process the oats in a food processor until finely ground, then mix with flour, baking soda, and salt.
- 3. In the food processor, blend the butter and brown sugar until smooth, then add the egg and vanilla and process until creamy.
- 4. Combine the flour mixture with the wet ingredients and pulse until just mixed, then add chocolate chips and coconut.
- 5. Drop tablespoonfuls of dough onto the baking sheets, spacing them about 2 inches apart.
- 6. Bake for 12-15 minutes, rotating the sheets halfway through, until lightly browned. Cool on wire racks.
