Ingredients

The dough

  • 1 cup salted butter, softened to room temperature
  • 1 cup packed light brown sugar
  • ½ cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs

The dry ingredients

  • 1 ¼ cups all-purpose flour
  • ½ cup natural unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup old-fashioned oats
  • 1 cup quick oats

The chocolate

  • 2 cups semisweet chocolate chips

Instructions

  1. Preheat the oven to 350°F and line two large baking sheets with parchment paper.
  2. In a large bowl, whip together the butter, brown sugar, and granulated sugar until light and fluffy.
  3. Add the vanilla and eggs, beating until creamy and light in color.
  4. In a separate bowl, whisk together the flour, cocoa powder, baking powder, baking soda, salt, and both types of oats.
  5. Mix the dry ingredients into the wet ingredients until just combined, then fold in the chocolate chips.
  6. Drop the batter by heaping tablespoon-sized scoops onto the prepared baking sheets, spacing them about 2 inches apart.
  7. Bake for 10-11 minutes until the edges are set but the middles are still soft.
  8. Transfer the cookies to a cooling rack to cool completely and repeat with the remaining dough.
