Instructions
- Preheat the oven to 350°F and line two large baking sheets with parchment paper.
- In a large bowl, whip together the butter, brown sugar, and granulated sugar until light and fluffy.
- Add the vanilla and eggs, beating until creamy and light in color.
- In a separate bowl, whisk together the flour, cocoa powder, baking powder, baking soda, salt, and both types of oats.
- Mix the dry ingredients into the wet ingredients until just combined, then fold in the chocolate chips.
- Drop the batter by heaping tablespoon-sized scoops onto the prepared baking sheets, spacing them about 2 inches apart.
- Bake for 10-11 minutes until the edges are set but the middles are still soft.
- Transfer the cookies to a cooling rack to cool completely and repeat with the remaining dough.
