Oatmeal Chocolate Chip Cookies

Ingredients

  • 2 cups old-fashioned rolled oats
  • 1 cup all-purpose flour
  • 6 ounces chopped semi-sweet chocolate
  • ½ teaspoon baking soda
  • ½ teaspoon ground cinnamon
  • ½ teaspoon kosher salt
  • ½ cup unsalted butter
  • 2 tablespoons neutral oil
  • ¾ cup light brown sugar
  • cup granulated sugar
  • 1 large egg
  • 1 large egg yolk
  • 1 teaspoon vanilla extract
  • to taste flaky salt

Instructions

  1. Preheat the oven to 375°F and line two baking sheets with parchment paper.
  2. In a medium bowl, mix the rolled oats, flour, chopped chocolate, baking soda, cinnamon, and salt.
  3. In a small saucepan, melt the butter over medium-low heat until browned and nutty in aroma.
  4. In a large bowl, whisk the browned butter, oil, brown sugar, and granulated sugar until combined.
  5. Add the egg, egg yolk, and vanilla to the mixture and whisk until smooth.
  6. Combine the dry mixture with the wet mixture until cohesive.
  7. Scoop out 2-tablespoon-sized balls of dough and place them on the baking sheets.
  8. Using wet hands, roll and flatten the dough balls slightly.
  9. Bake for 11-14 minutes until the edges are set and the centers are soft.
  10. Sprinkle with flaky salt and let cool on the baking sheet for 10 minutes before transferring to a rack.
