Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, mix the coconut oil, brown sugar, and granulated sugar until well combined.
- Add the eggs and vanilla extract, and mix until smooth.
- In another bowl, combine the flour, oats, shredded coconut, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients and mix until just combined.
- Fold in the chocolate chips.
- Scoop the dough onto a baking sheet lined with parchment paper.
- Bake for 10-12 minutes or until the edges are golden.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack.
