Coconut Oil Chocolate Chip Cookies

The chocolate

Instructions
- Cream together the coconut oil, sugars, egg, and vanilla extract until light and fluffy.
- Mix in the flour, cornstarch, baking soda, and salt until combined.
- Fold in the chocolate chips by hand.
- Shape the dough into balls and chill in the fridge for at least 2 hours.
- Preheat the oven to 350°F (175°C).
- Place the chilled dough balls on a baking sheet lined with parchment paper.
- Bake for 10-12 minutes until the edges are set and the centers look slightly undercooked.
- Cool on the baking sheet for about 5 minutes before transferring to a wire rack.
