Ingredients

The dough

  • ½ cup coconut oil, softened but not melted
  • ½ cup brown sugar, packed
  • cup granulated sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • cups all-purpose flour
  • 2 teaspoons cornstarch
  • 1 teaspoon baking soda
  • ¼ teaspoon salt

The chocolate

  • 1 cup semisweet chocolate chips

Instructions

  1. Cream together the coconut oil, sugars, egg, and vanilla extract until light and fluffy.
  2. Mix in the flour, cornstarch, baking soda, and salt until combined.
  3. Fold in the chocolate chips by hand.
  4. Shape the dough into balls and chill in the fridge for at least 2 hours.
  5. Preheat the oven to 350°F (175°C).
  6. Place the chilled dough balls on a baking sheet lined with parchment paper.
  7. Bake for 10-12 minutes until the edges are set and the centers look slightly undercooked.
  8. Cool on the baking sheet for about 5 minutes before transferring to a wire rack.
