Instructions
- Whisk together the flours, cornstarch, baking powder, baking soda, and salt in a bowl and set aside.
- In another bowl, beat the coconut oil, granulated sugar, and brown sugar until smooth.
- Add the egg, milk, and vanilla to the sugar mixture and mix until combined.
- Gradually add the dry ingredients and mix until just combined, then fold in the chocolate chips.
- Cover the dough and chill for at least 4 hours or overnight.
- Preheat the oven to 375°F and line a baking sheet with parchment paper.
- Scoop the dough into small balls and place them on the baking sheet, leaving space between each.
- Bake for 7 minutes until the edges are barely golden, then cool on a wire rack.
