Ingredients

  • ¾ cup white whole wheat flour
  • ¾ cup all-purpose flour
  • 2 teaspoons cornstarch
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon kosher salt
  • cup coconut oil
  • ½ cup granulated sugar
  • ½ cup brown sugar
  • 1 large egg
  • 1 tablespoon milk
  • 2 teaspoons pure vanilla extract
  • ¾ cup semisweet chocolate chips

Instructions

  1. Whisk together the flours, cornstarch, baking powder, baking soda, and salt in a bowl and set aside.
  2. In another bowl, beat the coconut oil, granulated sugar, and brown sugar until smooth.
  3. Add the egg, milk, and vanilla to the sugar mixture and mix until combined.
  4. Gradually add the dry ingredients and mix until just combined, then fold in the chocolate chips.
  5. Cover the dough and chill for at least 4 hours or overnight.
  6. Preheat the oven to 375°F and line a baking sheet with parchment paper.
  7. Scoop the dough into small balls and place them on the baking sheet, leaving space between each.
  8. Bake for 7 minutes until the edges are barely golden, then cool on a wire rack.
