Ingredients

  • cup melted coconut oil
  • ¼ cup unsweetened applesauce
  • ¼ cup dark brown sugar
  • 3 tablespoons granulated sugar
  • 1 tablespoon pure vanilla extract
  • 1 large egg
  • 1 ¼ cups white whole wheat flour
  • ½ teaspoon baking soda
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon kosher salt
  • ½ cup dark chocolate chips

Instructions

  1. Whisk together the coconut oil, applesauce, brown sugar, granulated sugar, and vanilla extract.
  2. Whisk in the egg until blended.
  3. In a separate bowl, whisk together the flour, baking soda, cinnamon, and salt.
  4. Combine the dry ingredients with the wet ingredients until just mixed.
  5. Fold in the chocolate chips and chill the dough for at least 1 hour.
  6. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  7. Roll the dough into 1 ½-inch balls and arrange them on the baking sheet.
  8. Bake for 8 to 9 minutes until lightly browned around the edges.
  9. Cool on the baking sheet for 2 minutes before transferring to a wire rack.
