Instructions
- Whisk together the coconut oil, applesauce, brown sugar, granulated sugar, and vanilla extract.
- Whisk in the egg until blended.
- In a separate bowl, whisk together the flour, baking soda, cinnamon, and salt.
- Combine the dry ingredients with the wet ingredients until just mixed.
- Fold in the chocolate chips and chill the dough for at least 1 hour.
- Preheat the oven to 350°F and line a baking sheet with parchment paper.
- Roll the dough into 1 ½-inch balls and arrange them on the baking sheet.
- Bake for 8 to 9 minutes until lightly browned around the edges.
- Cool on the baking sheet for 2 minutes before transferring to a wire rack.
