Ingredients

The cookie dough

  • 1 egg egg
  • ½ cup almond butter
  • ½ cup coconut oil, melted
  • ¾ cup coconut sugar
  • 1 tsp vanilla
  • cups oat flour
  • 1 tsp baking soda
  • ¼ tsp salt
  • 1 cup chocolate chunks

For finishing

  • to taste sea salt for sprinkling

Instructions

  1. 1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. 2. In a large bowl, whisk together the egg, almond butter, coconut oil, coconut sugar, and vanilla until smooth.
  3. 3. In a small bowl, stir together the oat flour, baking soda, and salt.
  4. 4. Add the dry ingredients to the wet and stir until combined.
  5. 5. Fold in the chocolate chunks.
  6. 6. Using a cookie scoop, form the dough into balls and place them on the baking sheet, flattening them slightly.
  7. 7. Add more chocolate chunks on top if desired.
  8. 8. Bake for 12-14 minutes or until golden.
  9. 9. Let the cookies cool for at least 15 minutes before touching, then sprinkle with sea salt.
