Instructions
- 1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
- 2. In a large bowl, whisk together the egg, almond butter, coconut oil, coconut sugar, and vanilla until smooth.
- 3. In a small bowl, stir together the oat flour, baking soda, and salt.
- 4. Add the dry ingredients to the wet and stir until combined.
- 5. Fold in the chocolate chunks.
- 6. Using a cookie scoop, form the dough into balls and place them on the baking sheet, flattening them slightly.
- 7. Add more chocolate chunks on top if desired.
- 8. Bake for 12-14 minutes or until golden.
- 9. Let the cookies cool for at least 15 minutes before touching, then sprinkle with sea salt.
