Ingredients

The dough

  • 2 cups blanched almond flour
  • ¼ cup arrowroot starch
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 6 tablespoons maple syrup
  • 2 tablespoons coconut oil
  • ¼ cup coconut milk

The mix-ins

  • ½ cup chocolate chips

Instructions

  1. Preheat the oven to 175C/350F and line a baking tray with parchment paper.
  2. In a mixing bowl, combine the dry ingredients and mix well.
  3. Heat the coconut oil and maple syrup until melted, then whisk together.
  4. Add the syrup and coconut oil mixture to the dry ingredients along with vanilla extract and coconut milk, then mix thoroughly.
  5. Fold in the chocolate chips.
  6. Form 16 small balls of dough, place them on the baking tray, and press them into cookie shapes.
  7. Bake for 12-15 minutes or until lightly brown, then cool on the pan for 5 minutes before transferring to a wire rack.
