Instructions
- Preheat the oven to 175C/350F and line a baking tray with parchment paper.
- In a mixing bowl, combine the dry ingredients and mix well.
- Heat the coconut oil and maple syrup until melted, then whisk together.
- Add the syrup and coconut oil mixture to the dry ingredients along with vanilla extract and coconut milk, then mix thoroughly.
- Fold in the chocolate chips.
- Form 16 small balls of dough, place them on the baking tray, and press them into cookie shapes.
- Bake for 12-15 minutes or until lightly brown, then cool on the pan for 5 minutes before transferring to a wire rack.
