Instructions
- Preheat the oven to 350°F.
- Blend the oats, flour, baking soda, and salt in a food processor until coarsely blended.

- Add the eggs and vanilla, mixing until light and fluffy.
- Combine the blended dry ingredients with the wet mixture, mixing until just combined.
- Fold in the coconut and chocolate chips until no dry streaks remain.
- Shape the dough into balls and place them on parchment-lined cookie sheets.
- Bake for 10-12 minutes, then let cool slightly before transferring to a wire rack.
