Ingredients

  • 1 cup old-fashioned rolled oats
  • 2 ¼ cups all-purpose flour
  • 1 teaspoon baking soda
  • ¾ teaspoon salt
  • 1 cup salted butter, softened
  • 1 ¼ cups packed light brown sugar
  • ½ cup packed dark brown sugar
  • 2 large eggs
  • 1 tablespoon vanilla
  • 1 cup sweetened or unsweetened coconut flakes
  • 2 cups semisweet or bittersweet chocolate chips

Instructions

  1. Preheat the oven to 350°F.
  2. Blend the oats, flour, baking soda, and salt in a food processor until coarsely blended.
  3. In a mixing bowl, cream together the butter and brown sugars until light in color.
  4. Add the eggs and vanilla, mixing until light and fluffy.
  5. Combine the blended dry ingredients with the wet mixture, mixing until just combined.
  6. Fold in the coconut and chocolate chips until no dry streaks remain.
  7. Shape the dough into balls and place them on parchment-lined cookie sheets.
  8. Bake for 10-12 minutes, then let cool slightly before transferring to a wire rack.
