Ingredients

  • cups all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1 teaspoon baking soda
  • ¾ teaspoon salt
  • 1 cup unsalted butter
  • 1 cup packed light or dark brown sugar
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 Tablespoon unsulphured or dark molasses
  • 2 teaspoons pure vanilla extract
  • 3 cups old-fashioned whole rolled oats
  • cups semi-sweet chocolate chips

Instructions

  1. Whisk together the flour, cinnamon, baking soda, and salt in a medium bowl.
  2. In a large bowl, beat the softened butter until smooth, then add the sugars and beat until creamed.
  3. Add the eggs, molasses, and vanilla, and mix until combined.
  4. Combine the wet and dry ingredients, then mix in the oats and chocolate chips until thick and sticky.
  5. Chill the dough for at least 45 minutes in the refrigerator.
  6. Preheat the oven to 350°F (177°C) and line baking sheets with parchment paper.
  7. Scoop about 3 tablespoons of dough for each cookie and place them on the baking sheets.
  8. Bake for 13-14 minutes until lightly browned on the sides and soft in the center.
  9. Cool on the baking sheet for 5 minutes before transferring to a wire rack.
