Dark Chocolate, Coconut, Oatmeal Cookies

Ingredients

  • 2 sticks unsalted butter
  • 1 cup sugar
  • 1 cup dark brown sugar
  • 2 large eggs
  • 1 tablespoon vanilla extract
  • 2 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon kosher salt
  • 1 cup shredded unsweetened coconut
  • 12 oz chocolate chips
  • 2 cups quick-cooking oats
  • 1 cup chopped walnuts or pecans

Instructions

  1. Preheat the oven to 350ºF.
  2. Cream the butter and sugars until smooth, then add the eggs and vanilla and mix for five minutes.
  3. Incorporate the dry ingredients into the mixture on low speed until just combined.
  4. Form the dough into lumps about the size of a squash ball and chill for at least 30 minutes.
  5. Space the chilled dough on a lined baking sheet and bake for 11-12 minutes.
  6. Let the cookies cool on the sheet for a bit before transferring them to wire racks to cool completely.
