Ingredients

  • cup all-purpose flour
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 cup unsalted butter, softened
  • cups packed light-brown sugar
  • ½ cup granulated sugar
  • 2 large eggs
  • 2 Tbsp milk
  • tsp vanilla extract
  • ¼ tsp coconut extract
  • 3 cups rolled oats (old fashioned)
  • 12 oz dark chocolate, chopped into small chunks
  • 1⅓ cups shredded coconut
  • 1 cup unsalted almonds, chopped

Instructions

  1. Preheat the oven to 350°F.
  2. In a mixing bowl, whisk together flour, baking soda, and salt.
  3. In a stand mixer, cream together the butter, brown sugar, and granulated sugar until creamy.
  4. Add eggs one at a time, mixing well after each addition.
  5. Stir in milk, vanilla extract, and coconut extract.
  6. Blend in the dry ingredients, then mix in the oats.
  7. Incorporate chocolate chunks, coconut, and almonds into the dough.
  8. Shape the dough into medium-sized balls and place them on lined baking sheets, spacing them 2 inches apart.
  9. Bake for 11 to 13 minutes, then allow to cool on the baking sheet for a few minutes before transferring to a wire rack.
