Instructions
- Cream the softened butter with both sugars until smooth.
- Add eggs, vanilla, and molasses, mixing until combined.
- In a separate bowl, whisk together flour, baking soda, cinnamon, and salt, then add to the wet ingredients and mix until combined.
- Beat in the oats and chocolate chunks until incorporated.
- Chill the dough in the refrigerator for 30-60 minutes.
- Preheat the oven to 350°F (177°C) and line baking sheets with parchment paper.
- Roll the dough into balls and place them on the baking sheets, spaced apart.
- Bake for 11-12 minutes until lightly browned on the edges, then sprinkle with sea salt and cool on the baking sheet.
