Ingredients

The dough

  • 1 cup unsalted butter, softened to room temperature
  • 1 cup packed light or dark brown sugar
  • ¼ cup granulated sugar
  • 2 large eggs, at room temperature
  • 1 Tablespoon pure vanilla extract
  • 1 Tablespoon unsulphured or dark molasses
  • 1 ⅔ cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon salt
  • 3 cups old-fashioned whole rolled oats
  • 2 4-ounce semi-sweet chocolate bars, chopped

Topping

  • to taste coarse sea salt

Instructions

  1. Cream the softened butter with both sugars until smooth.
  2. Add eggs, vanilla, and molasses, mixing until combined.
  3. In a separate bowl, whisk together flour, baking soda, cinnamon, and salt, then add to the wet ingredients and mix until combined.
  4. Beat in the oats and chocolate chunks until incorporated.
  5. Chill the dough in the refrigerator for 30-60 minutes.
  6. Preheat the oven to 350°F (177°C) and line baking sheets with parchment paper.
  7. Roll the dough into balls and place them on the baking sheets, spaced apart.
  8. Bake for 11-12 minutes until lightly browned on the edges, then sprinkle with sea salt and cool on the baking sheet.
