Instructions
- Preheat the oven to 350°F and prepare baking sheets.
- Blend 1 cup of old fashioned oats until powdery, then mix with flour, baking powder, baking soda, salt, and cinnamon in a bowl.
- Beat together butter and both sugars until fluffy, then add egg and vanilla extract.
- Gradually mix in the flour mixture, then stir in remaining oats, steel cut oats, and chocolate chunks.
- Drop spoonfuls of dough onto baking sheets and bake for 8 to 10 minutes until lightly browned.
