Ingredients

  • ½ cup solid coconut oil
  • 1 cup brown sugar
  • 2 pieces flax eggs
  • 1 ½ cups old-fashioned rolled oats
  • 1 cup gluten-free 1-to-1 baking flour
  • 2 teaspoons baking soda
  • ½ teaspoon ground cinnamon
  • ½ teaspoon sea salt
  • 1 teaspoon vanilla extract
  • 1 tablespoon pure cane molasses
  • ¾ cup vegan chocolate chips

Instructions

  1. Preheat the oven to 350°F and line baking sheets with parchment paper.
  2. Sift together flour, baking soda, cinnamon, and sea salt in a bowl.
  3. In a separate bowl, cream together coconut oil and brown sugar for 3 minutes.
  4. Add flax egg and vanilla extract, mixing for another 2 minutes until creamy.
  5. Gradually mix in the dry ingredients until just combined, then fold in molasses, oats, and chocolate chips.
  6. Cover the dough and refrigerate for 1 hour.
  7. Scoop 2-tablespoon portions of dough, roll into balls, and place on the baking sheet with space in between.
  8. Bake for 14 minutes, then cool on the baking sheet for 5-10 minutes before transferring to a wire rack.
