Instructions
- Preheat the oven to 350°F and line baking sheets with parchment paper.
- Sift together flour, baking soda, cinnamon, and sea salt in a bowl.
- In a separate bowl, cream together coconut oil and brown sugar for 3 minutes.
- Add flax egg and vanilla extract, mixing for another 2 minutes until creamy.
- Gradually mix in the dry ingredients until just combined, then fold in molasses, oats, and chocolate chips.
- Cover the dough and refrigerate for 1 hour.
- Scoop 2-tablespoon portions of dough, roll into balls, and place on the baking sheet with space in between.
- Bake for 14 minutes, then cool on the baking sheet for 5-10 minutes before transferring to a wire rack.
