Instructions
- Preheat the oven to 180C/350F and line a baking tray with parchment paper.
- In a large bowl, mix coconut sugar, white sugar, coconut oil, applesauce, and vanilla until combined.
- Add flour, baking soda, and salt, and mix well.
- Fold in the oats and chocolate chips until just combined, avoiding overmixing.
- Drop balls of cookie dough onto the lined baking tray, spacing them about 2 inches apart.
- Bake for 15-17 minutes until the edges are golden brown.
- Let the cookies cool on the tray for 10 minutes before transferring to a wire rack.
