Ingredients

The cookie mixture

  • 1 ¼ cups quick-cooking oats
  • 1 cup white whole wheat flour
  • 1 ½ teaspoons baking powder
  • 1 ½ teaspoons ground cinnamon
  • ½ teaspoon kosher salt

The wet ingredients

  • ¼ cup unsweetened applesauce
  • 4 tablespoons unsalted butter, melted and cooled
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • ½ cup honey

The mix-ins

  • cup dark chocolate chips
  • ¼ cup raisins
  • ¼ cup well chopped raw walnuts or pecans

Instructions

  1. Whisk together the oats, flour, baking powder, cinnamon, and salt in a large bowl.
  2. In a medium bowl, combine the applesauce, butter, egg, vanilla, and honey, and whisk until blended.
  3. Pour the liquid mixture into the flour mixture and stir until just combined; the dough will be wet and sticky.
  4. Fold in the chocolate chips, raisins, and walnuts, then refrigerate the dough for at least 30 minutes.
  5. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  6. Drop the dough onto the baking sheet in 1 ½-inch balls, leaving space between each, and flatten them slightly.
  7. Bake for 9 to 10 minutes until golden and firm around the edges, then cool on the baking sheet for 2 minutes before transferring to a wire rack.
