Healthier Oatmeal Cookies

Ingredients

Wet ingredients

  • ¾ cup coconut oil
  • ½ cup raw honey
  • ¼ cup date paste
  • 1 tsp pure vanilla extract
  • 2 large eggs

Dry ingredients

  • cups rolled oats
  • cups whole wheat flour
  • 2 tbsp corn starch
  • 1 tbsp ground cinnamon
  • 1 tsp baking soda
  • ¾ tsp salt
  • ½ tsp ground nutmeg

Add-ins

  • 1 cup organic raisins
  • 1 cup chopped walnuts

Instructions

  1. Preheat the oven to 350°F.
  2. Mix all the dry ingredients in a large bowl until well combined and set aside.
  3. In a separate bowl, whisk together all the wet ingredients until smooth and creamy.
  4. Combine the wet ingredients with the dry ingredients and mix until evenly combined.
  5. Stir in the raisins and walnuts until well distributed.
  6. Scoop 20 balls of dough onto a parchment-lined cookie sheet, using about 4 tbsp of dough per cookie.
  7. Refrigerate the unbaked cookies for at least an hour.
  8. Transfer the chilled cookies to a baking sheet lined with parchment paper, spacing them at least 2 inches apart.
  9. Bake for 13-14 minutes or until slightly golden.
  10. Push a few raisins and walnut pieces into the cookies immediately after baking.
  11. Let the cookies cool on the sheet for a couple of minutes before transferring them to a cooling rack.
