Instructions
- Preheat the oven to 350°F.
- Mix all the dry ingredients in a large bowl until well combined and set aside.
- In a separate bowl, whisk together all the wet ingredients until smooth and creamy.
- Combine the wet ingredients with the dry ingredients and mix until evenly combined.
- Stir in the raisins and walnuts until well distributed.
- Scoop 20 balls of dough onto a parchment-lined cookie sheet, using about 4 tbsp of dough per cookie.
- Refrigerate the unbaked cookies for at least an hour.
- Transfer the chilled cookies to a baking sheet lined with parchment paper, spacing them at least 2 inches apart.
- Bake for 13-14 minutes or until slightly golden.
- Push a few raisins and walnut pieces into the cookies immediately after baking.
- Let the cookies cool on the sheet for a couple of minutes before transferring them to a cooling rack.
