Instructions
- Preheat the oven to 350°F (176°C) and prepare a baking sheet.
- In a large bowl, mix the dry ingredients: oats, flour, coconut sugar, cinnamon, baking soda, and salt.
- In a small bowl, combine ground chia seeds with water and let it sit for 5 minutes to thicken.
- Add the chia mixture, melted coconut oil, applesauce, and vanilla to the dry ingredients and mix until a thick dough forms.
- Stir in the walnuts and raisins until evenly distributed.
- Scoop about 1 tablespoon of dough, roll it into a ball, and flatten it slightly on the baking sheet.
- Bake for about 10 minutes until the cookies are lightly browned and set.
- Let cool before serving.
