Ingredients

Dry Ingredients

  • 1 cup white whole wheat flour
  • cups oats
  • ½ cup coconut sugar
  • 1 teaspoon cinnamon
  • ½ teaspoon baking soda
  • ½ teaspoon kosher salt

Wet Ingredients

  • cup melted coconut oil
  • cup applesauce
  • 1 tablespoon ground chia seeds
  • 3 tablespoons water
  • 1 teaspoon vanilla extract

Add-ins

  • cup chopped walnuts
  • ½ cup raisins

Instructions

  1. Preheat the oven to 350°F (176°C) and prepare a baking sheet.
  2. In a large bowl, mix the dry ingredients: oats, flour, coconut sugar, cinnamon, baking soda, and salt.
  3. In a small bowl, combine ground chia seeds with water and let it sit for 5 minutes to thicken.
  4. Add the chia mixture, melted coconut oil, applesauce, and vanilla to the dry ingredients and mix until a thick dough forms.
  5. Stir in the walnuts and raisins until evenly distributed.
  6. Scoop about 1 tablespoon of dough, roll it into a ball, and flatten it slightly on the baking sheet.
  7. Bake for about 10 minutes until the cookies are lightly browned and set.
  8. Let cool before serving.
