Instructions
- Preheat the oven to 350°F and line two baking sheets with parchment paper.
- In a large bowl, combine the flour, baking soda, baking powder, salt, and cinnamon.
- In a separate bowl, whisk together the melted coconut oil, brown sugar, whole egg, egg yolk, and vanilla.
- Stir the wet ingredients into the dry ingredients, then fold in the oats, raisins, and walnuts if using.
- Let the dough rest for 20 minutes.
- Use a cookie scoop to divide the dough into tablespoon-sized balls and place on the baking sheets.
- Bake for 10 to 11 minutes until puffed and golden.
- Allow cookies to cool on the baking sheets for 5 minutes before transferring to wire racks to cool completely.
