Ingredients

  • 1 cup unsalted butter, softened to room temperature
  • 1 cup packed light or dark brown sugar
  • ¼ cup granulated sugar
  • 2 large eggs
  • 1 Tablespoon pure vanilla extract
  • 1 Tablespoon unsulphured or dark molasses
  • 1⅔ cups all-purpose flour
  • 1 teaspoon baking soda
  • teaspoons ground cinnamon
  • ½ teaspoon salt
  • 3 cups old-fashioned whole rolled oats
  • 1 cup raisins
  • ½ cup chopped toasted walnuts (optional)

Instructions

  1. Cream the softened butter and both sugars together until smooth.
  2. Add the eggs, vanilla, and molasses, mixing until combined.
  3. In a separate bowl, whisk together the flour, baking soda, cinnamon, and salt, then add to the wet ingredients and mix on low.
  4. Beat in the oats, raisins, and walnuts on low speed until combined.
  5. Chill the dough in the refrigerator for 30-60 minutes.
  6. Preheat the oven to 350°F (177°C) and line baking sheets with parchment paper.
  7. Roll the dough into balls and place them on the baking sheets, spacing them 2 inches apart.
  8. Bake for 12-14 minutes until lightly browned, then cool on the baking sheet for 5 minutes before transferring to a wire rack.
