Instructions
- Preheat the oven to 350°F and line a baking sheet with parchment paper.
- In a small bowl, mix the oats, almond flour, cinnamon, baking soda, and salt.
- In a large bowl, cream together the coconut sugar and butter, then whisk in the egg and add the vanilla.
- Combine the wet and dry ingredients until well mixed.
- Fold in the chocolate chips and raisins.
- Roll the mixture into balls and flatten them on the baking sheet.
- Bake for 11-13 minutes or until the edges are golden brown.
- Allow to cool completely before eating, then store in an airtight container.
