Ingredients

The cookie mixture

  • cups rolled oats
  • cups almond flour
  • 2 tsp cinnamon
  • ½ tsp baking soda
  • ¼ tsp salt

The wet ingredients

  • cup coconut sugar
  • ½ cup butter or coconut oil, softened
  • 1 large egg
  • 2 tsp vanilla

Add-ins

  • ¾ cup chocolate chips
  • ¾ cup raisins

Instructions

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. In a small bowl, mix the oats, almond flour, cinnamon, baking soda, and salt.
  3. In a large bowl, cream together the coconut sugar and butter, then whisk in the egg and add the vanilla.
  4. Combine the wet and dry ingredients until well mixed.
  5. Fold in the chocolate chips and raisins.
  6. Roll the mixture into balls and flatten them on the baking sheet.
  7. Bake for 11-13 minutes or until the edges are golden brown.
  8. Allow to cool completely before eating, then store in an airtight container.
