Ingredients

Dry ingredients

  • 1 cup whole wheat flour
  • cups rolled oats
  • ½ cup almond meal
  • ½ cup golden flaxseed, ground
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 tbsp ground cinnamon
  • ½ tsp ground nutmeg

Wet Ingredients

  • 1 cup unsweetened applesauce
  • 1 cup buttermilk
  • 3 large eggs
  • 1 tsp pure vanilla extract

Add Ins

  • 1 red apple finely diced
  • ½ cup raisins
  • ½ cup pecans, chopped

Instructions

  1. Preheat the oven to 375°F.
  2. In a large bowl, combine all dry ingredients and whisk until thoroughly combined.
  3. In a separate bowl, combine all wet ingredients and mix until fully combined.
  4. Pour the wet ingredients over the dry and mix gently with a rubber spatula until just combined.
  5. Stir in the diced apple, raisins, and pecans.
  6. Using a cookie scoop, place balls of dough onto a lined cookie sheet.
  7. Bake for 10 to 12 minutes until the tops are light golden brown.
  8. Press the cookies down gently with a fork after removing them from the oven.
  9. Transfer cookies to a cooling rack and let cool completely before storing in an airtight container.
