Instructions
- Preheat the oven to 375°F.
- In a large bowl, combine all dry ingredients and whisk until thoroughly combined.
- In a separate bowl, combine all wet ingredients and mix until fully combined.
- Pour the wet ingredients over the dry and mix gently with a rubber spatula until just combined.
- Stir in the diced apple, raisins, and pecans.
- Using a cookie scoop, place balls of dough onto a lined cookie sheet.
- Bake for 10 to 12 minutes until the tops are light golden brown.
- Press the cookies down gently with a fork after removing them from the oven.
- Transfer cookies to a cooling rack and let cool completely before storing in an airtight container.
