Ingredients

Dry Ingredients

  • 2 cups almond flour
  • ½ cup flax seed meal
  • ½ cup unsweetened shredded coconut
  • 1 tbsp ground cinnamon
  • 1 tsp baking soda
  • 1 tsp Himalayan salt

Wet Ingredients

  • ¼ cup lard
  • ¼ cup ghee
  • ¼ cup date paste
  • 2 whole eggs
  • 1 tsp pure vanilla extract

Add-ons

  • ½ cup walnuts, chopped
  • ½ cup dates, chopped
  • ½ cup raisins

Instructions

  1. Preheat the oven to 375°F.
  2. In a large bowl, mix the dry ingredients well.
  3. In another bowl, cream together the lard, ghee, and date paste until fluffy.
  4. Add the eggs one at a time, mixing well after each addition, then add the vanilla extract.
  5. Combine the dry ingredients with the wet ingredients until just mixed.
  6. Stir in the walnuts, dates, and raisins.
  7. Drop tablespoon-sized amounts of the dough onto a lined baking sheet and flatten slightly.
  8. Bake for 9-10 minutes and let cool before transferring to a rack.
