Instructions
- Preheat the oven to 350°F and line a baking sheet with parchment paper.
- Combine the flaxseed and water in a small bowl and let it thicken for about 5 minutes.
- In a large bowl, mix the oat flour, baking soda, cinnamon, and salt.
- In another bowl, combine the almond butter, coconut oil, applesauce, vanilla, and brown sugar, then add the thickened flaxseed mixture.
- Stir the whole rolled oats, apples, walnuts, and raisins into the dry ingredients, then mix in the wet ingredients until just combined.
- Scoop rounded tablespoons of dough onto the baking sheet and flatten slightly.
- Bake for 12 to 15 minutes until the bottoms are browned.
- Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
