Ingredients

  • 2 tablespoons ground flaxseed
  • 4 tablespoons warm water
  • cups oat flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • ½ teaspoon sea salt
  • ½ cup almond butter
  • ¼ cup melted coconut oil
  • ¼ cup applesauce
  • 1 teaspoon vanilla extract
  • ½ cup brown sugar
  • 1 cup whole rolled oats
  • ¾ cup finely chopped apple
  • ½ cup chopped walnuts
  • ¼ cup raisins

Instructions

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. Combine the flaxseed and water in a small bowl and let it thicken for about 5 minutes.
  3. In a large bowl, mix the oat flour, baking soda, cinnamon, and salt.
  4. In another bowl, combine the almond butter, coconut oil, applesauce, vanilla, and brown sugar, then add the thickened flaxseed mixture.
  5. Stir the whole rolled oats, apples, walnuts, and raisins into the dry ingredients, then mix in the wet ingredients until just combined.
  6. Scoop rounded tablespoons of dough onto the baking sheet and flatten slightly.
  7. Bake for 12 to 15 minutes until the bottoms are browned.
  8. Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
