Instructions
- Whisk together the dry ingredients in a medium mixing bowl.
- Melt the butter in a small bowl, let it cool, then whisk in the vanilla extract and egg.
- Add honey to the wet mixture and combine well.
- Make a well in the center of the dry ingredients and pour in the wet mixture, stirring until just combined.
- Fold in the diced apples and refrigerate the dough for 30 minutes.
- Preheat the oven to 325°F and prepare a baking sheet.
- Scoop the dough onto the baking sheet, shaping them into flattened balls.
- Bake for 10-12 minutes until the edges appear dry.
- Cool the cookies on a wire rack and prepare the glaze.
- Drizzle the glaze over the cookies and let set before serving.
