Ingredients

The cookies

  • 2 cups old-fashioned whole rolled oats
  • 1 cup all-purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ teaspoon apple pie spice
  • ¼ cup unsalted butter
  • ½ cup unsweetened applesauce
  • ¾ cup packed dark or light brown sugar
  • ½ cup granulated sugar
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • ½ cup finely diced apple
  • ½ cup chopped walnuts

The icing

  • cups confectioners’ sugar
  • 2 tablespoons pure maple syrup
  • 2 tablespoons milk

Instructions

  1. Preheat the oven to 350°F (177°C) and line baking sheets with parchment paper.
  2. In a large bowl, whisk together oats, flour, baking soda, salt, cinnamon, and apple pie spice.
  3. In another bowl, whisk melted butter, applesauce, brown sugar, and granulated sugar until combined. Then add the egg and vanilla.
  4. Combine the wet and dry ingredients, mixing until just combined, then fold in apple chunks and walnuts.
  5. Scoop the dough onto the prepared baking sheets, flattening them slightly.
  6. Bake for 14-15 minutes or until lightly browned, then cool for 10 minutes before icing.
  7. For the icing, whisk together confectioners’ sugar, maple syrup, and milk, then drizzle over the cookies.
