Apple Oatmeal Cookies

Wet Ingredients

Instructions
- Preheat the oven to 350°F and prepare a baking sheet with nonstick spray.
- In a large bowl, mix the dry ingredients together.
- In a separate medium bowl, whisk the wet ingredients together, excluding the melted coconut oil.
- Combine the wet mixture with the dry mixture and mix well.
- Stir in the melted coconut oil until the batter is thick and resembles oatmeal.
- Scoop the batter onto the baking sheet using a cookie scoop and flatten them slightly.
- Optionally, add diced apples on top of each cookie.
- Bake for 12-16 minutes until the bottoms are browned, then transfer to a cooling rack.
- Dust with ground cinnamon before serving.
