Ingredients

Dry Ingredients

  • cups rolled oats, lightly pulverized
  • 1 cup white whole wheat flour
  • ½ teaspoon baking powder
  • teaspoons ground cinnamon
  • pinch salt
  • ¾ cup finely diced fresh apples

Wet Ingredients

  • 1 cup unsweetened applesauce
  • 1 cup brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • tablespoons melted coconut oil

Instructions

  1. Preheat the oven to 350°F and prepare a baking sheet with nonstick spray.
  2. In a large bowl, mix the dry ingredients together.
  3. In a separate medium bowl, whisk the wet ingredients together, excluding the melted coconut oil.
  4. Combine the wet mixture with the dry mixture and mix well.
  5. Stir in the melted coconut oil until the batter is thick and resembles oatmeal.
  6. Scoop the batter onto the baking sheet using a cookie scoop and flatten them slightly.
  7. Optionally, add diced apples on top of each cookie.
  8. Bake for 12-16 minutes until the bottoms are browned, then transfer to a cooling rack.
  9. Dust with ground cinnamon before serving.
