Instructions
- Preheat the oven to 350°F and line baking sheets with silicone mats or parchment paper.
- Whisk together flour, oats, cinnamon, baking soda, and salt in a bowl.
- Cream together the butter and brown sugar in an electric mixer.
- Mix in the egg and vanilla extract.
- Toss the chopped apples with lemon juice in a small bowl.
- Combine the flour mixture with the butter mixture, then fold in the apples.
- Scoop the dough onto prepared baking sheets, spacing them 2 inches apart, and flatten slightly.
- Bake until the cookies are set, about 14-15 minutes, then cool on a wire rack.
