Ingredients

The base

  • cup old-fashioned rolled oats
  • ¾ cup quick-cooking oats
  • 2 Tbsp ground flax seed
  • ¾ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon ground ginger
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 2 large eggs
  • cup plain or vanilla Greek yogurt
  • ¼ cup unsalted butter
  • 3 Tbsp pure maple syrup
  • 1 teaspoon pure vanilla extract

The mix-ins

  • 1 cup finely diced apple
  • cup raisins and/or dried cranberries
  • ¼ cup chopped walnuts

Instructions

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. In a large bowl, combine the oats, ground flax, cinnamon, nutmeg, ginger, baking powder, salt, eggs, yogurt, butter, maple syrup, and vanilla. Mix until well combined.
  3. Fold in the diced apples, raisins or dried cranberries, and walnuts.
  4. Scoop the dough onto the baking sheet using a ¼ cup measuring cup, flattening each scoop to about ½-inch thick.
  5. Bake for 15-18 minutes until cooked through and edges are golden brown. Cool on a wire rack before storing.
