Instructions
- Preheat the oven to 350°F and line a baking sheet with parchment paper.
- In a large bowl, combine the oats, ground flax, cinnamon, nutmeg, ginger, baking powder, salt, eggs, yogurt, butter, maple syrup, and vanilla. Mix until well combined.
- Fold in the diced apples, raisins or dried cranberries, and walnuts.
- Scoop the dough onto the baking sheet using a ¼ cup measuring cup, flattening each scoop to about ½-inch thick.
- Bake for 15-18 minutes until cooked through and edges are golden brown. Cool on a wire rack before storing.
