Instructions
- Preheat the oven to 350°F and line a baking sheet with parchment paper.
- In a large bowl, whisk together the flour, baking soda, baking powder, and salt.
- In another bowl, cream together the granulated sugar, brown sugar, eggs, coconut oil, and vanilla until light and fluffy.
- Gradually add the dry ingredients to the wet mixture and mix until combined.
- Stir in the shredded coconut and quick oats.
- Drop tablespoonfuls of dough onto the prepared baking sheet.
- Bake for 10 minutes or until cookies are set and slightly browned.
- Let the cookies cool on the baking sheet for 2 minutes before transferring them to a wire rack to cool completely.
