Ingredients

  • cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 2 large eggs
  • 1 cup coconut oil
  • 2 teaspoons vanilla extract
  • 1 cup shredded, sweetened coconut
  • 1 cup quick oats

Instructions

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, baking soda, baking powder, and salt.
  3. In another bowl, cream together the granulated sugar, brown sugar, eggs, coconut oil, and vanilla until light and fluffy.
  4. Gradually add the dry ingredients to the wet mixture and mix until combined.
  5. Stir in the shredded coconut and quick oats.
  6. Drop tablespoonfuls of dough onto the prepared baking sheet.
  7. Bake for 10 minutes or until cookies are set and slightly browned.
  8. Let the cookies cool on the baking sheet for 2 minutes before transferring them to a wire rack to cool completely.
