Ingredients

The cookie dough

  • 1 cup flour
  • ½ teaspoon baking soda
  • ½ teaspoon kosher salt
  • ½ cup dark brown sugar
  • ¼ cup white sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon coconut extract (optional)
  • ½ cup coconut oil, melted

The mix-ins

  • ½ cup Quaker 3-Minute Steel Cut Oats
  • ½ cup old fashioned oats
  • ½ cup shredded sweetened coconut flakes
  • ¾ cup dark or semi-sweet chocolate chips

Instructions

  1. Preheat the oven to 350°F.
  2. In a bowl, combine flour, baking soda, and salt.
  3. In a mixing bowl, mix dark brown sugar, white sugar, egg, vanilla, coconut extract (if using), and melted coconut oil until well blended.
  4. Add the flour mixture to the wet ingredients and mix until combined.
  5. Stir in the steel cut oats, old fashioned oats, shredded coconut, and chocolate chips until well combined.
  6. Use a cookie scoop to portion the dough into balls and place them on a baking sheet.
  7. Bake for 9-11 minutes until the edges are set but the centers are still soft.
  8. Allow the cookies to cool on the baking sheet for 2-3 minutes before transferring them to a cooling rack.
