Instructions
- Preheat the oven to 350°F.
- In a bowl, combine flour, baking soda, and salt.
- In a mixing bowl, mix dark brown sugar, white sugar, egg, vanilla, coconut extract (if using), and melted coconut oil until well blended.
- Add the flour mixture to the wet ingredients and mix until combined.
- Stir in the steel cut oats, old fashioned oats, shredded coconut, and chocolate chips until well combined.
- Use a cookie scoop to portion the dough into balls and place them on a baking sheet.
- Bake for 9-11 minutes until the edges are set but the centers are still soft.
- Allow the cookies to cool on the baking sheet for 2-3 minutes before transferring them to a cooling rack.
