Instructions
- Preheat the oven to 375° F.
- Cream together the butter and sugars until light and fluffy.
- Beat in the eggs and vanilla.
- In a separate bowl, mix together the oats, flour, pudding mix, baking soda, and salt.
- Gradually add the dry mixture to the creamed mixture, mixing well.
- Stir in the chocolate chips and nuts, if using.
- Drop 2 tablespoons of dough per cookie onto an ungreased, parchment-lined cookie sheet.
- Bake for 12-14 minutes until golden around the edges.
- Let cool on the pan for 5 minutes before transferring to a wire rack.
- Store in an air-tight container.
