Ingredients

The base

  • 1 medium ripe banana, mashed
  • 2 large eggs
  • ½ cup granulated or brown sugar
  • ¼ cup creamy peanut butter
  • 1 cup milk (of choice)
  • 1 tablespoon pure vanilla extract
  • 3 cups old-fashioned rolled oats
  • 2 tablespoons ground flax seed
  • 2 teaspoons baking powder
  • ½ teaspoon coarse salt

The chocolate

  • 1 cup dark chocolate chips, divided

Instructions

  1. 1. Preheat the oven to 350°F and coat a 9x9 baking dish with cooking spray.
  2. 2. In a large mixing bowl, beat together the mashed banana, eggs, brown sugar, and peanut butter until fluffy.
  3. 3. Gradually add the milk and vanilla extract while mixing until well combined.
  4. 4. In another bowl, mix the oats, flax seed, baking powder, and salt.
  5. 5. Combine the dry ingredients with the wet ingredients and fold in ¾ cup of dark chocolate chips.
  6. 6. Transfer the batter to the baking dish and sprinkle the remaining ¼ cup of chocolate chips on top.
  7. 7. Bake for 20-30 minutes until set and a toothpick comes out clean.
  8. 8. Allow to cool slightly, slice into squares, and serve warm.
