Ingredients

The base

  • cup gluten free rolled oats
  • 1 unit egg
  • cup non dairy milk
  • 2 unit very ripe large bananas
  • 2 tsp cinnamon
  • 1 tsp vanilla extract
  • ½ tsp baking soda
  • ½ tsp sea salt

Optional toppings

  • ½ cup chopped pecans
  • ½ cup dairy free chocolate chips
  • ¼ cup melted coconut butter

Instructions

  1. Preheat the oven to 375°F.
  2. Line an 8x8 baking dish with parchment paper, spraying the inside first to prevent sticking.
  3. In a high-speed blender, combine the oats, egg, non-dairy milk, bananas, cinnamon, vanilla, baking soda, and sea salt.
  4. Blend on the lowest setting for about 15 seconds until well combined.
  5. Transfer the mixture to a medium bowl and fold in the pecans and chocolate chips.
  6. Pour the mixture into the prepared baking dish and spread it evenly.
  7. Bake for 30-35 minutes.
  8. Once slightly cooled, drizzle with melted coconut butter and cut into 9-12 squares.
